Twisted Olive Meyer Lemon EVOO Hummus


Ingredients:

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup Meyer Lemon Extra Virgin Olive Oil (EVOO)

2 tbsp tahini

2 cloves garlic, minced

Juice of 1 lemon

Zest of 1 lemon

1/2 tsp ground cumin

Salt and pepper, to taste

2-3 tbsp water (as needed for desired consistency)

Fresh parsley, for garnish


Instructions:

  1. In a food processor, combine the drained chickpeas, tahini, minced garlic, lemon juice, lemon zest, ground cumin, salt, and pepper. Blend until smooth.

  2. With the food processor running, slowly drizzle in the Meyer Lemon EVOO until the mixture is creamy and well combined.

  3. If the hummus is too thick, add 2-3 tablespoons of water until you reach your desired consistency.

  4. Taste and adjust seasoning if needed.

  5. Transfer the hummus to a serving bowl and drizzle with a little extra Meyer Lemon EVOO. Garnish with fresh parsley.

Serve with pita bread, fresh veggies, or your favorite crackers for a delightful and healthy snack! 🍋🧆
