Tabbouleh Delight

Ingredients:

  • 1&1/2 cups quinoa, rinsed

  • 3 cups water

  • 1 cup parsley, chopped

  • 1/2 cup cherry tomatoes, finely chopped

  • 1 tbs lemon juice

  • 1 tbs Kalamata Extra Virgin Olive Oil

  • 1/2 tsp salt

  • 3 green onions, sliced

  • Pinch of allspice

  • Pinch of black pepper

Topping suggestions:

  • Chickpeas

  • Green, Spanish, or Kalamata olives, halved

  • Diced Cucumber

  • Cherry tomatoes, halved

  • Feta cheese, crumbled

  • Avacado

  • Tuna or chicken

Directions:

  1. Boil quinoa and water in a small saucepan over high heat. Cover and reduce to low and cook for 15 min, or until water is absorbed. Fluff with fork.

  2. Add parsley, green onions, lemon juice, and spices to a food processor. Pulse until finely minced. Add Olive Oil and pulse to combine.

  3. Scrape into a large mixing bowl, then add tomatoes and quinoa. Stir until well mixed.

  4. Add choice of toppings.
